Eleanor Whitmore Early Childhood Center’s Healthy Harvest program, in conjunction with Share the Harvest Farm in East Hampton, involves children in a school gardening project that pairs science education with learning about nutrition and healthy eating.
An educator from the farm meets weekly with prekindergarten groups, which each have an outdoor raised bed gardening area, to share picture books, discussion, and activities.
Children plant their own vegetable seeds, water seedlings in classroom hothouses, transplant them outdoors, tend them, and watch them grow.
At harvest time the produce becomes a healthy snack in smoothies or other treats, or all on its own. Students also participate in harvesting extra vegetables for donation to local food pantries.
